Deli Chip & Lamb Souvlaki Wraps

This is how they do it in Greece-chips and lamb in a wrap…simply yum!

Ingredients

  • 600g packet frozen Birds Eye Deli Seasoned Chips – Sea Salt & Rosemary
  • 500g lamb fillets or backstraps, cubed
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 tablespoon lemon juice
  • Finely grated zest of 1 small lemon
  • 6 pita breads or wraps
  • ½ cup tzatziki
  • 1 small oak leaf lettuce, leaves pulled apart
  • 2 tomatoes, sliced
  • 1 small red onion, thinly sliced

Method

STEP 1
Cook frozen Birds Eye Deli Chips following packet directions.
STEP 2
Meanwhile, combine lamb, oil, oregano, lemon juice and zest in a bowl and thread onto 6 small bamboo skewers. Cook on a chargrill plate or BBQ until done to your liking.
STEP 3
Spread pita breads with tzatziki, top with lettuce, tomato, onion, lamb and Birds Eye Deli Seasoned Chips. Wrap to enclose filling and serve immediately. Serve extra Birds Eye Deli Seasoned Chips on the side.
Tips
Substitute lamb for chicken souvlaki, if desired.
